Julie's Sugarless Oatmeal


It's the time of year when everyone is visiting, and one of my favorite visitors is my sister-in-law, Julie!  So Julie has a mother-in-law named Barbara who has been making this sugarless oatmeal recipe since her kids were little, and passed it on to Julie who passed it on to me.  Therefore, JULIE'S Sugarless Oatmeal.  It's fast, delicious, low cal, and so thick it's almost like pudding.  Let's get started...

Ingredients:

3 eggs
3 1/2 cups milk
1/2 cup honey
1/4 teaspoon salt
2 cups oats (any kind works)
4 tablespoons butter

What to do:

In a large saucepan, with the heat off, combine eggs, milk, honey and salt.



NOW turn the heat on about medium and start stirring it with a whisk.



Be careful because you DO NOT WANT THIS TO BOIL.  Just cook it stirring very frequently until it is warm.  Watch for little bubbles to start to form around the edges, that's when you're ready to add the oats.



Now you can let it come to a boil, turn the heat to low and allow to cook for 10 minutes, stirring often.  When it starts to thicken add the butter, stir it in and serve with fruit or plain (I'll admit, even though it is delicious without any added sugar, I put a little brown sugar in for my kids).
